Healthy Chocolate Zucchini Brownie Recipe

Zucchini is a delicious fruit that many people overlook, including myself. So, when I came across a few recipes that included it, I had to give it a shot.
 
But, I’ve been known to add my own twist, and this recipe is no different. So, I came up with a healthy chocolate zucchini brownie recipe.

 I have a sweet tooth and so does my entire family. But, I don’t want to sacrifice our overall health for a yummy dessert. So, I like to swap out some of the ingredients to for healthier options.
 
This was my first time making zucchini bread and wasn’t quite sure about the consistency. I wanted it to be less cake or bread like and more like a brownie because we love having brownie sundaes.

Here’s what you’ll need:

2-3 zucchinis (3 cups grated)
1/2 cup olive oil
1/2 cup dairy-free yogurt
1 1/2 teaspoon baking powder
1 cup chocolate chips
1/3 cup of cocoa powder
2 cups brown rice flour
1/4 teaspoon salt
1 cup brown sugar or raw cane sugar
1 teaspoon vanilla
cooking spray

Directions:

  1. Preheat oven to 350F. Spray baking pan (9 x 13 inches) and set aside.
  2. In a large bowl, beat eggs and sugar. Add in olive oil and yogurt and mix well.
  3. Stir in cocoa and mix.
  4. Combine flour, salt, and baking powder in a bowl and sift into the egg and vanilla wet mixture. Stir until smooth, but don’t overdo it.
  5. Add in grated zucchini, 3/4 cup of the chocolate chips, and stir just until it is coated with the batter.
  6. Put ¼ cup of chocolate chips aside. Sprinkle a little flour over the rest of it and fold in the batter.
  7. Share the batter into pan. Top each with the chocolate chips and bake for about 45 minutes. Be sure to test the middle with a toothpick or knife. If it comes out clean, you’re good to go.
  8. Let it cool completely before slicing and serving.
 
 
 
Please note: Most zucchini bread recipes call for grated zucchini, but I wanted to try something a little different. I decided to put it in the in the food processor instead because I knew my 2-year-old would probably take one look at the green pieces in the brownie and run for the hills.

I included shredded zucchini in the recipe instructions because I think it would actually come out tasting better if shredded. But, I think either way would be fine.
