There are tons of yummy recipes that include sweet potato. There’s sweet potato pie, one of my husband’s favorite indulgence. Then there’s also sweet potato casserole, a great meal to enjoy days at a time. We usually enjoy these types of meals during the holidays, but there are other awesome things you can make with sweet potato. One of my kids’ favorite is baked sweet potato fries. It’s a quick and easy recipe that can be paired with just about anything.
When it comes to preparing meals for my family, I try and go the healthy route. It’s important for my husband and I to encourage our kids to make healthy choices to ensure their well being. The great thing about this healthy sweet potato fries recipe is that it’s baked, not fried and it’s just as tasty and it’s also gluten-free.
Here’s what you’ll need:
2 medium size sweet potatoes
1 tsp garlic
1 tsp cilantro
1 tsp basil
1 tsp oregano
½ tsp (sea salt optional)
Cooking spray

Directions:
1. Preheat oven to 350 degrees.
2. Cut sweet potatoes into thin slices (similar to french fries).
3. Add garlic, cilantro, basil, oregano, salt to sweet potatoes and make sure it’s evenly distributed. Don’t be afraid to use your hands to combine everything.
4. Line baking tray with foil (I do this for easy clean up later).
5. Coat foil with cooking spray.
6. Bake for about 30 to 45 minutes. It should yield about 45 fries, which is enough for my family of four. It really depends on how thin you slice the sweet potatoes. Also be sure to flip them after 15-20 minutes so that it’s evenly cooked on both sides.
This healthy baked sweet potato fries recipe is something the whole family can enjoy. It’s crunchy on the outside and soft on the inside.
