Breaded Baked Zucchini Recipe

Who doesn’t love fried foods? French fries are certainly my guilty pleasure. While there’s nothing wrong with indulging every now and then, I like to stick with healthy options whenever possible – especially when it comes to our kids. I usually can’t pay them to eat their veggies, But, breaded baked zucchini is one of their favorite side dishes. In fact, it’s probably one of the most requested meals.

It’s easy to make, and it’s healthy for you too. Zucchini (also known as summer squash) is packed with vitamin A, B-6, C, and also has iron and calcium. I usually make zucchini noodles and spaghetti squash. But, breaded baked zucchini is a tasty and healthy treat that our entire family enjoys.

Breaded Baked Zucchini Recipe

Ingredients

3 medium zucchinis
1 tsp cilantro
½ tsp garlic
1 tsp basil
½ tsp black pepper
3/4 cup panko breadcrumbs
¼ cup Pecorino Romano cheese
Olive oil
4 egg whites

Directions

  1. Preheat oven to 400 degrees.
  2. Slice zucchini into medium slices.
  3. Combine cilantro, basil, black pepper, garlic with eggs whites in a bowl.
  4. Add in zucchini slices, making sure that both sides are fully coated.
  5. Mix breadcrumbs and Pecorino Romano cheese on a plate.
  6. Add olive oil to baking sheet, making sure it’s evenly coated.
  7. Place breaded zucchini on the the baking sheet.
  8. Bake on each side until golden brown.

It should take about a half hour, including preparation time, and can be served hot or cold. It should be enough for a family of four.

Feel free to pair this side dish with your favorite poultry and other veggies. You can also pan fry instead of baking. Just coat medium pan with about 1 tablespoon olive oil and cook over medium heat until each side is golden brown.
