Easy Tilapia Recipe in 30 Minutes or Less

One of the biggest challenges I face each day is making dinner for my family. My hubby is not into fish. Like most preschoolers, Princess is a picky eater, and Baby O has a limited diet. So, you can imagine how crazy it gets trying to please everyones’ taste buds. I realize that the best way to accomplish this endeavor is to find ways to save time cooking foods everyone’s happy with. I do this by staggering cooking days.

Princess will eat homemade mac and cheese everyday, if possible. I’d whip some up early in the week, which can last about three days. That would leave me an opportunity to offer up some variety for the rest of the family. Baby O is doing great with solids, and enjoys my homemade purees. Lately, I’ve been introducing him to foods like pasta, baked sweet potato, and butternut squash.

It’s been a tough balancing act cooking for a family of four. But, I’m managing just fine. I want to share this easy tilapia recipe that I was able to prepare in 30 minutes or less.

Here’s what you’ll need:
4 Talapia fillet (you can also substitute with chicken breasts)
1/4 cup diced onion
1/8 teaspoon black pepper
1/8 teaspoon garlic
1/4 cup terriyaki sauce
1/3 cup organic barbeque sauce
1 sweet pepper sliced thin

After washing the tilapia fillets in lemon and water, I add all the ingredients. To be honest, I don’t do much measuring because it would mean more dishes to wash when I’m done. In case you’re wondering, no I don’t just throw everything in the dish washer. I’m old school. I still hand wash dishes, I know it seems a bit odd. Anyway, I digress. Since I’m always pressed for time, I find myself mixing all the ingredients in a bowl and then placing everything on heavy duty foil for an easy cleanup later.

Bake for about 25 minutes at 350 degrees. This is the final product.

I paired it with brown rice and squash prepared ahead of time, and voila!
