When it comes to cooking, easy recipes work best for my busy schedule. The other day I decided to dust off the crockpot, and whip up a meal the entire family would enjoy – or at least, I hope they would.
The great thing about using a crockpot is that it saves time, and lawd knows I don’t have much of it to spare. I’m not a huge fan of meats, but I was craving chicken. So, I took the poultry out of the freezer and got to work.
While the kids were taking a nap, I was able to clean, wash, and season the chicken. The great thing about my crockpot creation is that I never worry about sticking to a particular recipe. It’s completely fool proof. I basically mixed a bunch of mish mosh together like carrots, onions, peppers, along with the chicken.
My hubby recommended that we order in, which worked out perfectly. I was able to allow the chicken marinade time to soak overnight.
When I woke up the next morning, I took it out of the fridge and transferred the everything to the crock pot. I let it cook on high for about four hours. During that time I got the kids ready for school, and out the door. When I returned home, I was able to eat breakfast, check my email, and get ready for work. Here’s the final product:
This delicious meal lasted a few days, and the whole family enjoyed it! Jeez, I need to use the crockpot more often.
