Getting kids to eat their veggies is always a challenge. I’m always trying to come up with recipes that have the right mix of ingredients to satisfy my family’s taste buds. I recently made zucchini noodles with shrimp and broccoli Alfredo sauce.
If my kids had a choice, they’d eat pasta and cheese for every meal everyday of the week. When it comes to eating broccoli, Princess has no trouble chewing the tree like vegetable. But O on the other hand, refuses to eat it all together.
I decided to swap out pasta for zucchini noodles and whip up my own Alfredo sauce without the heavy cream.

Ingredients:
Shrimp and zucchini:
- 1 lb shrimp shelled and deveined
- 1 tablespoon minced garlic or garlic powder
- 2 tablespoons lemon juice
- 3 medium sized zucchini sliced into noodles
- 1 teaspoon sea salt
- dash of black pepper
- 2 tablespoon olive oil
Broccoli Alfredo Sauce:
- 2 cups steamed broccoli florets
- 1 tablespoon garlic
- 1/2 oregano
- 2 tablespoon butter substitute
- 1/2 cup rice milk
- 1/2 cup parmesan cheese
- dash of black pepper
Directions:
Add garlic and olive oil to a large pan over medium heat. Allow pan to heat for a couple of minute before adding the shrimp. Allow the shrimp to cook for about 5 minutes and season with salt and pepper. Once cooked, remove from pan and set aside.
Add lemon juice to the pan. Then toss in the zucchini and cook while stirring occasionally for about 5 minutes. Don’t over cook.
For the broccoli Alfredo sauce, place steamed broccoli florets in the food processor. Add remaining ingredients and mix until the mixture is smooth. Then combine shrimp, zucchini, and broccoli Alfredo sauce for a tasty meal.
I added a side of pasta just in case it wasn’t a hit with the little ones. Princess had some of the zucchini noodles and thought it was okay. As I imagined, O wanted nothing to do with the zucchini. But he enjoyed the pasta and shrimp.
