Banana bread is one my son’s favorite treats. Rather than throwing out our over ripe bananas, I decided to whip up some vegan banana bread.
📝 Ingredients:
- 3 ripe bananas, mashed
- 1/2 cup maple syrup
- 1/4 cup olive oil
- 1/4 cup oat milk
- 1 teaspoon vanilla extract
- 2 cups unbleached all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup chopped walnuts (optional for crunch & flavor!)
👣 Directions:
- In a large bowl, combine wet ingredients: mashed bananas, maple syrup, olive oil, oat milk, and vanilla extract. Mix well.
- Gradually stir in the dry ingredients: flour, baking soda, salt, and cinnamon. Mix until just combined—don’t overmix!
- Fold in walnuts if using.
- Line a loaf pan with parchment paper and pour in the batter.
- Bake for about 60 minutes or until golden brown.
- Test doneness by inserting a toothpick or knife in the center—if it comes out clean, your loaf is ready!
- Let cool before slicing (if you can wait that long 😉).
💡 Tips & Variations:
- For extra moisture, add 1–2 tablespoons of applesauce.
- Swap out walnuts for chocolate chips or dried fruit if you prefer.
- Make it gluten-free by using a 1:1 gluten-free flour blend.
This vegan banana bread is naturally sweet, soft on the inside, and just the right amount of comforting. Enjoy it warm with a pat of plant-based butter, or toast a slice and top it with almond butter for a next-level treat.
