DIY: Easy Avocado Tomato Dip

Finding time to prepare a healthy meal can be tough these days. Running after two kids and working full time doesn’t make things easy at all. Whenever I’m pressed for time, I find myself snacking a lot. The issue that I often have is trying to keep snacking healthy and at a minimum. The best way I know how to snack healthy is to stick with fruits and veggies. I put together an easy to make avocado tomato dip using just five ingredients.

DIY: Easy Avocado Tomato Dip

Avocado Tomato Dip
Ingredients:

1 Ripened Avocado
1 Medium sized tomato
A dash of black pepper
A Pinch of fresh garlic
1/4 teaspoon lemon juice

Peel, then mash avocado in a bowl. Mix in the lemon juice, garlic, and black pepper. Place mixture in a serving container and set aside. Cut tomato into small pieces and place on top of avocado mixture. The dip can be served with crackers, bread, or tortilla chips. My hubby thoroughly enjoyed this, and Baby O loved the mashed avocado separately.

It’s a healthy snack rich in fiber, vitamin A, C, and K. You can’t go wrong with that. Whenever I make this, I feel like I’m killing three birds with one stone. I’m making a healthy snack along with healthy baby food – not to mention there’s no cooking involved. Bon appetite!
