Despite stepping away from my full-time weather gig last year, my schedule still gets pretty crazy, leaving little time to prepare healthy meals. I’ve managed to cut corners by coming up with fast and easy dinner ideas, including a dish using Success® Rice paired with a pineapple chicken teriyaki recipe.
Easy Pineapple Chicken Teriyaki Recipe With Success® Rice
When it comes to preparing any meal, simple works best. Between helping my daughter with homework, working from home, and caring for a 2-year-old, I’m usually pressed for time.
But the great thing about this dinner is that you won’t need a lot of ingredients. You can pick up your favorite teriyaki sauce at the grocery or you can make your own. I wanted to add my own little spin, so I decided to whip up my own pineapple teriyaki sauce recipe.
Here’s what you’ll need:
1 lb chicken (cubed)
3/4 cup carrots (diced or shredded)
1/4 cup diced onion
1/2 cup fresh pineapple cut into small chicks
cooking spray
For the teriyaki sauce:
1 teaspoon garlic
Dash of black pepper (feel free to add a little more. My daughter is sensitive to spicy foods)
1/2 cup low sodium soy sauce
1 tbs organic cane sugar
1 tsp ginger
1/4 cup pineapple juice
Directions
Once chicken is rinsed and cut into small pieces, spray pan with cooking spay. Add chicken and let it cook over medium heat for about 15 minutes or until golden brown.
Add carrots and onions. Then combine soy sauce, garlic, black pepper, ginger, pineapple juice, and cane sugar to make the pineapple teriyaki sauce and pour over the chicken and veggies. Let simmer for about 5 minutes before adding the pineapple chucks. Cook for another few minutes and voila!
Please note: You can also use this teriyaki sauce as a marinade. Just add your choice of meat, and let marinate for 3 to 4 hours before grilling.
While the chicken was on the stove, I decided to whip up a couple of bags of Success® Rice. It comes in four different kinds including, whole grain brown rice, white rice, jasmine rice, and basmati rice.
Since we’re always eating brown rice, I wanted to change things up a bit and give the Success® Jasmine Rice rice a try. Normally, it takes about 20-40 minutes for rice to cook. But, this time it only took 10 minutes. There was no measuring required. You also have the convenience of boiling the rice inside of the bag on the stove top or in the microwave.

The buttery, nutty smell of the jasmine rice was the perfect combination to the chicken teriyaki and pineapple recipe.
