DIY: Cheezy Orzo & Garden Veggies

Getting Princess to each her veggies is like trying to win the lottery. Trying to prepare a meal that everyone will enjoy is just as difficult. I find myself making the same thing over and over again. The other day, I happen to be in the pasta aisle and came across orzo. It’s pasta that resembles rice. I read the box and learned that it cooks in like 9 minutes. Quick meals! Now that’s what I’m talking about.

As a busy mom, I’m always looking to cut corners, and this is the perfect way to save time. Now all I needed to do was add other ingredients to the meal I was now formulating in my head, which didn’t leave me many options.

My hubby doesn’t like fish, except for the occasional shrimp. Princess doesn’t like anything, but mac and cheese these days. I, quite frankly, am getting sick and tired of everything. I figured I could please everyone by whipping up something new. Here’s what I came up with.

16 Ounces of Orzo
1 Cup sun-dried tomatoes
3/4 Cups shredded carrots
1 Zucchini chopped
1 Teaspoon Salt
Pinch of garlic and black pepper
Romano cheese
2 Teaspoon butter or substitute

To be honest, I’m not one for measuring. This is an estimate. What I love about this recipe is that it can be altered any way you like. Add salt to water and boil orzo until desired tenderness. Once prepared, strain. In the same pot add butter on low heat. Once it’s melted, mix in orzo. Add in sun-dried tomatoes, carrots, zucchini. Season with garlic and black pepper. Combine ingredients, serve, and sprinkle with pecorino romano or parmesan cheese. This meal can be served warm or cold.
